We source from hand-picked suppliers, only buying the best animals we can find – naturally fed, well-looked after and of specific provenance. Most of it is specifically reared for us. We are known for salt marsh lamb & mutton, dry aged red ruby beef and Mangalitsa pork (a deeper and 'meatier' taste than more conventional breeds).
